Kibbe of Lentils

Kibbe of Lentils: A vegetarian recipe, healthy, gluten free, lebanese origin.

Ingredients:

  • 1kg of lentils.
  • 1/2kg thin wheat(Bulgur)
  • 1 small white onion
  • 20 leaves green mint.
  • 1/2 teaspoon of pepper (to taste, optional)
  • 2/3 teaspoon of salt (to taste)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cumin
  • Olive oil

Preparation:

  1. First wash the lentils with cold water. then put them in a pot with water and cook over medium heat for 40 minutes. (or until the lentils gets cooked well.) Then place in a colander to remove the water.
  2. Place the bulgur in a small bowl and wash it with cold water, then squeeze it to get rid of as much water as possible. Put it aside.
  3. Place the mint, onion, salt, cinnamon, cumin and pepper and 1/2cup of wheat in food processor and mix well. (Seasoning)
  4. Place the cooked lentils in a large bowl, add the wheat and seasoning.
  5. Mix well with hands for a few minutes to make sure that all the ingredientes are infused.
  6. Put the kibbe in a plate 
  7. Add oil in it.
  8. Serve with optional side, including: mint, green pepper, green onion, white onion.
