Kibbe of Lentils: A vegetarian recipe, healthy, gluten free, lebanese origin.
Ingredients:
- 1kg of lentils.
- 1/2kg thin wheat(Bulgur)
- 1 small white onion
- 20 leaves green mint.
- 1/2 teaspoon of pepper (to taste, optional)
- 2/3 teaspoon of salt (to taste)
- 1/2 teaspoon ground cinnamon
- 1 tablespoon cumin
- Olive oil
Preparation:
- First wash the lentils with cold water. then put them in a pot with water and cook over medium heat for 40 minutes. (or until the lentils gets cooked well.) Then place in a colander to remove the water.
- Place the bulgur in a small bowl and wash it with cold water, then squeeze it to get rid of as much water as possible. Put it aside.
- Place the mint, onion, salt, cinnamon, cumin and pepper and 1/2cup of wheat in food processor and mix well. (Seasoning)
- Place the cooked lentils in a large bowl, add the wheat and seasoning.
- Mix well with hands for a few minutes to make sure that all the ingredientes are infused.
- Put the kibbe in a plate
- Add oil in it.
- Serve with optional side, including: mint, green pepper, green onion, white onion.
