SHAWARMA

Shawarma is a recipe from the Middle East, most known name behind kibbe, tabboule, falafel and hommos. The name comes from the #turkish word (#çevirme)#turquie which means "turn", which has some deep layers of marinated beef, or chicken, stacked on a vertical spit and rotated slowly against a fire grilling. The meat is then wrapped in a Syrian bread with garlic paste (chicken shawarma) or tahini sauce (shawarma meat) served with grilled tomatoes, parsley, potato chips. 



Ingredients:
     Meat: 1 kg of red meat (low fat) 
Seasoning ingredients:         
  • 5 cloves of garlic.
  • ½ cup of lemon juice freshly squeezed.
  • ¼ cup apple vinegar or grape.
  • ¼ cup of olive oil.
  • 1 teaspoon cloves of India.
  • 1 teaspoon of salt.
  • ½ teaspoon of oregano.
  • ½ teaspoon of cinnamon powder.
  • ½ teaspoon pepper.
  • ¼ teaspoon of ginger powder.
Ingredients tahini sauce:
  • 1 cup tahini paste (sesame paste).
  • 1 cup of lemon juice freshly squeezed.
  • 3 cloves garlic, crushed.
  • a pinch of salt (to taste).
Sandwiches Ingredients:
  • Finely chopped parsley.
  • Grilled tomatoes.
  • Fries.
  • Flatbread.
Preparation:
Season the meat:
  1. Mix the seasoning ingredients in a blender for a few minutes. Do not mix the oil yet.
  2. Cut meat into pieces of 4 cm long by no more than 2 cm thick.
  3. In a bowl, rub the meat with the seasoning, sprinkle a little olive oil, then rub again, cover and let marinate for (1-2) hours in the refrigerator.
  4. Put the pieces of meat (shawarma) in a pan with a little spice. covering the tray tightly with aluminum foil and place in oven (average temperature) for 1 hour.
Prepare the tahini sauce:
  1. In a small bowl, mix together the tahini paste, crushed garlic, lemon juice and salt.
Serving Shawarma:
  1. Place (to taste) shawarma in a Syrian bread along the diameter, sprinkle some Tahini sauce and chopped parsley, add some grilled tomatoes, fried potatoes.
  2. Roll and enjoy.
