Hommos Betahini

Hommos literally translates from Arabic as chickpeas.
Hommos Betahini (chickpeas & tahini) ​​an appetizer.
Ingredients:
      - 1kg chickpeas
      - 4 cloves of garlic.
      - 8 Tablespoons Tahini 
      - Olive oil to taste
      - 1/2cup of lemon juice
      - 1/2 teaspoon salt (to taste)
Preparation: 
  1. Wash the chickpeas, then soak for 10 hours with one teaspoon of baking  powder(soda). If you prefer not to use baking powder, you'll have to cook them for a long time. The baking soda helps soften them faster.
  2. Then put the chickpeas in a colander / strainer to get rid of the water.
  3. Place the chickpeas in a pan with ½ teaspoon of baking soda (optional, only to speed the process) and then add water until covering the chickpeas for about two fingers.
  4. Simmer on low heat for about 1 hour.
  5. To see if it is cooked. The test is simple, try to crush a chickpea with your fingers, if crushes easily and feels smooth, it's done.
  6. Once the chickpeas are cooked and still hot add them immediately to a food processor and grind for 3-5 minutes on low speed.
  7. Add salt and garlic, then slowly start adding Tahini.
  8. Add the lemon juice at the end and let the food processor run for a few minutes. 
  9. Ready, put hommos on a plate and serve with olive oil on the top.
