Baba Ghanouj


Baba Ghanouj is a delicious Mediterranean appetizer made with roasted eggplant and tahini sauce 

Ingredients:
         . 3 eggplants.
         .5 tablepoons tahini paste.
         .Juice of 1 lemon freshly squeezed
         .3 cloves garlic, crushed
         .1 teaspoon salt (or to taste)
Preparation:
  1. Bake the eggplants in the oven on medium heat or on a grill for about 30 minutes.
  2. While still warm eggplants peel them and discard as much as possible of its seeds.
  3. Strain the water from the eggplants by placing them in a colander for about 10 minutes.This step is important so you do not get a liquid.
  4. Add eggplants and all the ingredients into a food processor and let it run for 5 minutes until a paste.
  5.  place in a serving dish, garnish with: olive oil, chopped parsley,
  6. Serve cold as an appetizer
