Mujadara is a traditional Lebanese dish made with lentils, rice and caramelized onions .Healthy, simple to make.
Ingredients:
- 1/2 kg of lentils.
- 1/2 kg of rice.
- 4 medium onions.
- 1/2 tablespoon salt (or to taste).
- 1/2 cup of olive oil.
Preparation:
- Wash the lentils in cold water.
- Put the lentils in a saucepan and add water (4-5 cups) and boil on medium heat for 20-25 minutes or until the lentils are soft.
- Add rice, salt and olive oil in the pan and stir well. You may need to add more water, if too much water had evaporated. Cover and simmer over low heat for 30 minutes.
- Meanwhile, peel and chop the onions and fry them in 1/4 cup vegetable oil, for about 20 minutes or until caramelized (dark brown).
- When the rice is fully cooked, mix well and place in serving dish and garnish with the caramelized onions.
- Serve cold with a side optional yogurt and salad.
