Baba Ghanouj is a delicious Mediterranean appetizer made with roasted eggplant and tahini sauce
Ingredients:
. 3 eggplants.
.5 tablepoons tahini paste.
.Juice of 1 lemon freshly squeezed
.3 cloves garlic, crushed
.1 teaspoon salt (or to taste)
Preparation:
- Bake the eggplants in the oven on medium heat or on a grill for about 30 minutes.
- While still warm eggplants peel them and discard as much as possible of its seeds.
- Strain the water from the eggplants by placing them in a colander for about 10 minutes.This step is important so you do not get a liquid.
- Add eggplants and all the ingredients into a food processor and let it run for 5 minutes until a paste.
- place in a serving dish, garnish with: olive oil, chopped parsley,
- Serve cold as an appetizer
