Potatoes with Garlic&Coriander

Lebanese appetizer made with potatoes, garlic and coriander
Ingredients:
  • 4 potatoes
  • 1 bunch of green coriander.
  • 10 cloves garlic, crushed
  • 1/2 teaspoon red pepper (to taste)
  • 1/2 cup olive oil
  • 1/2 teaspoon salt (to taste)
Preparation:
  1. Cut the potatoes into small cubes. Fry them in oil until golden brown / crispy.
  2. Wash the coriander leaves and discard the stems and chop finely. 
  3. In a pan fry the coriander and crushed garlic over medium heat with olive oil only briefly. You want the garlic turns a little raw, not fully cooked if you overcook it loses its flavor.
  4. Add salt (to taste) and pepper (to taste) then
  5. Finally add the fried potatoes to the pan, mix well and cook for another 3-5 minutes.
  6. Serve hot or cold as an appetizer.

  1. Love fried potatoes, but never tried coriander. Will have t give it a shot.
